This soup combines simple yet incredibly nourishing foods to keep our bodies strong during fall and winter months. It's a staple in my household!
Ingredients
🫒1 tablespoon olive oil
🧅1 small onion
🥕4 carrots
🍚1/2 cup Arborio or sushi rice (washed)
🍜4 cups chicken broth
🍋1 lemon
🥚2 eggs
🐓2 chicken breasts shredded
🧂1/2 tsp salt + 1 tsp pepper
🌱1/4 cup dill - optional
Instructions
- Chop onion and carrots small, sauté in pan with olive oil
- Add rice and chicken broth - bring to a boil and then reduce to a simmer for 15 minutes.
- Add 2 eggs and the juice of 1 lemon to a bowl and mix
- Ensure rice is fully cooked
- *FIRST add 2-3 spoonfuls of hot chicken broth to the bowl of eggs and lemon and mix
- *THEN add to the soup and stir quickly - the soup with begin to thicken
- Add shredded chicken, salt, pepper and dill to taste
